Banana-Chocolate chip mummy (with one mummy- mommy)muffins

This treat is great for your kids lunch bags and it's a perfect way to get into the Halloween spirit!

Hello there! I present you my terrifying mummies and one terrifying mummy mommy lol.

My daughter found out about mummies from a Scooby Doo movie and from then on she doesn't like calling me mommy because it's sounds very close to mummy and she thinks they're scary so now I'm officially called Mamma. :0)

I'm aware that in the UK Mummies are mothers but this just doesn't work for my daughter, she doesn't like to think of a scary creature when she calls me, ( I guess that's a good thing hehe), anyway... let's start with these muffins!

  • 4 Ripe Bananas

  • 1/3 cup melted butter cooled

  • 2/3 cup coconut sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1 teaspoon baking soda

  • A pinch of salt

  • A pinch of cinnamon

  • 1 1/2 cups all purpose flour

  • 1 cup of semisweet chocolate chips

For the frosting:

  • Melted chocolate for the mommy's hair

  • 1 cup unsalted butter, softened.

  • 3-4 cups confectioners sugar.

  • ¼ teaspoon table salt

  • 1 tablespoon vanilla extract

  • Up to 4 tablespoons of whole milk or heavy cream


  1. Preheat oven to 350.

  2. Grease your muffin tins. It's better to avoid cupcake liners for this recipe because they are quite soft and it can be difficult to get them out of the liners.

  3. Peel the bananas and throw them in your stand mixer bowl with the melted butter and mix it all together.

  4. Keep blending until the mixture is creamy and smooth.

  5. Add coconut sugar, egg, cinnamon and vanilla and mix just until combined.

  6. Stir in salt and baking soda.

  7. Add flour and chocolate chips and mix until just combined. No overmixing.

  8. Divide into muffin tins.

  9. Bake until toothpick pulls out clean for about 18-20 minutes.

  10. Let them cool completely before adding the frosting.

  11. For the frosting just mix all the ingredients, (except for the melted chocolate for the mummy mommy's hair), until you end up with a nice, creamy consistency.

  12. Then it's time to spread it in the muffins!, you can use two chocolate chips for the eyes with the round part looking up and then try to spread the frosting so it looks like bandages.

  13. Melt a few chocolate chips in the microwave to make the mummy mommy's hair and then spread it in the muffin.
